Flower Steamed Bun

I've been doing a few steaming project these few days. It was fast and simple which is just perfect for this hot season. Am trying to cut down the intake of oily food ! And have taken lots of fresh fruits & water to prevent dehydration! Just hoping not to fall sick easily under this kind of weather.

Starter Dough Ingredients :
200gm all purpose flour
a pinch of salt
1/2 tspn yeast
110ml water

- combine all ingredients together to form a soft dough and knead till smooth.
- leave to proof for one hours.
- then divide into 4 portion (about 70-75gm per portion),
(keep the unused portion in the fridge for other recipes.)

Main Dough Ingredients :

130ml water
70gm start dough (or one portion), tear into pieces
200gm all purpose flour/superfine flour
100gm pau flour
1/2 tspn baking powder
1 tbsp milk powder
2-1/2 tbsp sugar
1-1/2 tspn yeast
1 tbsp shortening

Method :

- combine all ingredients into a mixer bowl to form a soft dough.
- knead untill smooth.
- divide dough into 14 portion.
( I double the ingredients and made half into pandan flavour by adding in 1 tspn coconut milk extract and 1/2 tspn pandan extract/green colouring & divide 14 portion each.)




- join one pce white dough and one pce green dough together, then roll flat.
- make a few cuts in the center.
- twist the dough and then make a knot.

- place them to the steamer tray and let to rest for 20-30 mins.
- finally, steam for 10 mins and then serve hot.

Here's my babies! Just look at them.... Hhmmm...mmm......

Really really fluffy and aromatic due to the coconut flavouring I've added in. If you can't find the coconut extract, probably you can use light coconut milk instead of water. My daughter just adores it! She's having these for her breakfast and also brought two along for her lunch box. Hope you all will enjoy this recipe as well!

This is so good, I wanted to do some steamed buns this weekend. The coconut extract is easy for me, but I'd have to search for the pandan extract. Theses look so pretty to eat!

Lyndsey : Don't worry! Just omit the pandan extract and use the green colouring will do. The coconut extract already perfect enough for the whole flavouring.

This flower steam bun is very tempting, did you put green food coloring? I try to read your recipe and couldn't find where the green color come from. Please let me know, because I am quite tempted in making this. I might have to bake them though, since I don't have a good steamer.

Hi there, the starter dough can be kept at least 3-5 days at the bottom fridge. Throw it away if the dough has changed to darker colour or dark spots. The starter dough may also use in making french bread or other sourdough bread.

Another question is can I use pau or HK flour instead of plain flour?

Hi Priscilla, yes you can use both pau or HK flour. Those are extreme fine flour. The buns will be softer compare to all purpose flour. So, enjoy & have fun!

One other thing is can I make the starter dough and keep it in the fridge overnight?

Sorry, due to keyboard glitch, I was not able to type properly my query on the yeast earlier. The yeast I was preferring to is dry baker's yeast saf-instant each weighs 11gm with 5 sachets packed in a box.

I like to know whether can I use the rest of the starter dough for making baked buns. Normally for baked buns, I used bread flour to make gelatinised dough. Since, I still have left over starter dough made from pau flour for the steamed mantaos, can I use it to incorporated into main dough for bread and make baked buns. Do u have recipe which u can point me to.

I tried out ur steamed manutous but buns turned out hard very fast few hours after steamed. By night they were hard like rock.
I wonder have it got to do with the flour. I used HK flour from starter to main doughs. Ur recipe has combination of pau, superlite and AP flours. So, I am now confused whether failure to make it was due to flour?

Kindly advise. BTW, I let starter dough proof for one hour before keeping it in the fridge and used it the next day. I read somewhere that overnight starter need no proofing but must straightaway be wrapped into plastic bag leaaving no space and kept in the fridge.

Hi Priscilla,
If not mistaken your yeast isn't working well during the prooving stage. There's nothing to do with the starter dough. You may try to combine yeast with lukewarm water and leave it aside for 5-10 mins or untill bubbling, before adding in other ingredients. Other than that, do let the bun dough rest for a few more minutes than the normal time allow before steamed. Make sure the buns are all double in size before steamed.
